Description
Quick and easy stuffed bell peppers made in the air fryer.
Ingredients

- 4 bell peppers
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup salsa
- 1 cup shredded cheese
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 350°F (175°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix the rice, black beans, corn, salsa, cumin, salt, and pepper.
- Stuff the peppers with the mixture and top with cheese.
- Place the peppers in the air fryer basket.
- Cook for 12-15 minutes until the peppers are tender and cheese is melted.
Notes
- Feel free to add ground meat for extra protein.
- You can use any color of bell peppers.
- Adjust cooking time based on pepper size.
