Description

Quick and easy stuffed bell peppers made in the air fryer.


Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix the rice, black beans, corn, salsa, cumin, salt, and pepper.
  4. Stuff the peppers with the mixture and top with cheese.
  5. Place the peppers in the air fryer basket.
  6. Cook for 12-15 minutes until the peppers are tender and cheese is melted.

Notes

  • Feel free to add ground meat for extra protein.
  • You can use any color of bell peppers.
