Quick and easy veggie egg rolls made in an air fryer.
Ingredients

- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup sliced green onions
- 1/4 cup bell pepper, diced
- 1 teaspoon garlic powder
- 1 teaspoon soy sauce
- 1 package egg roll wrappers
- Cooking spray
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix cabbage, carrots, green onions, bell pepper, garlic powder, and soy sauce.
- Take an egg roll wrapper and place 2 tablespoons of the veggie mixture in the center.
- Fold the wrapper, sealing the edges with water.
- Spray the air fryer basket with cooking spray.
- Place the egg rolls in the basket in a single layer.
- Spray the tops of the egg rolls with cooking spray.
- Cook for 10-12 minutes or until golden brown.
- Serve hot with your choice of dipping sauce.
Notes
- Adjust the filling ingredients to your taste.
- Store leftover egg rolls in the refrigerator.
- Reheat in the air fryer for best results.
