- 1 cup zucchini, sliced
- 1 cup cherry tomatoes
- 1 cup red onion, chopped

Instructions
- Preheat the air fryer to 400°F.
- In a bowl, combine the vegetables.
- Add olive oil, garlic powder, Italian seasoning, salt, and pepper. Toss to coat.
- Thread the vegetables onto skewers.
- Place skewers in the air fryer basket.
- Cook for 10-12 minutes, turning halfway through.
- Remove and serve hot.
