Quick and healthy vegetable stir fry made in an air fryer.
Ingredients

- 2 cups mixed vegetables (broccoli, bell peppers, carrots)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a bowl, mix the vegetables, olive oil, garlic, soy sauce, ginger, salt, and pepper.
- Add the mixture to the air fryer basket.
- Cook for 10-12 minutes, shaking halfway through.
- Check for desired tenderness and serve hot.
