A simple recipe for crunchy almond biscotti made in an air fryer.
Ingredients

- 2 cups all-purpose flour
- 1 cup sugar
- 1 cup almonds, chopped
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your air fryer to 320°F (160°C).
- In a bowl, mix flour, sugar, baking powder, and salt.
- Add eggs and vanilla extract. Combine until a dough forms.
- Fold in chopped almonds.
- Shape the dough into logs and place them in the air fryer basket.
- Cook for 25 minutes or until golden brown.
- Remove from the air fryer and let cool for 10 minutes.
- Slice the logs into biscotti pieces.
- Return the biscotti to the air fryer and cook for an additional 10 minutes for extra crunch.
Notes
- Store in an airtight container.
- Best served with coffee or tea.
- Can substitute almonds with other nuts if desired.
