Description

A quick and tasty breakfast quesadilla made in an air fryer.


Ingredients

  • 2 tortillas
  • 1 cup shredded cheese
  • 2 eggs
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup cooked sausage or bacon (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 350°F (175°C).
  2. In a bowl, whisk together the eggs, bell peppers, onions, salt, and pepper.
  3. Heat a skillet and scramble the egg mixture until just set.
  4. On one tortilla, layer half of the cheese, then the scrambled eggs, optional meat, and the remaining cheese.
  5. Top with the second tortilla.
  6. Place the quesadilla in the air fryer basket.
  7. Cook for 5-7 minutes or until golden brown and crispy.
  8. Remove from the air fryer and cut into wedges.
  9. Serve warm.
