Description
A quick and tasty breakfast quesadilla made in an air fryer.
Ingredients

- 2 tortillas
- 1 cup shredded cheese
- 2 eggs
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup cooked sausage or bacon (optional)
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 350°F (175°C).
- In a bowl, whisk together the eggs, bell peppers, onions, salt, and pepper.
- Heat a skillet and scramble the egg mixture until just set.
- On one tortilla, layer half of the cheese, then the scrambled eggs, optional meat, and the remaining cheese.
- Top with the second tortilla.
- Place the quesadilla in the air fryer basket.
- Cook for 5-7 minutes or until golden brown and crispy.
- Remove from the air fryer and cut into wedges.
- Serve warm.

- Use any cheese of your choice.
- Add avocado or salsa for extra flavor.
- Adjust cooking time based on your air fryer model.
