Ingredients

  • 1/2 cup shredded cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 8 small flour tortillas
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. In a bowl, whisk the eggs with salt and pepper.
  3. Add diced bell peppers and onions to the eggs.
  4. Cook the egg mixture in a skillet over medium heat until scrambled.
  5. Place a spoonful of the egg mixture and cheese in the center of each tortilla.
  6. Roll the tortillas tightly and secure with a toothpick if necessary.
  7. Brush the taquitos with olive oil.
  8. Place the taquitos in the air fryer basket in a single layer.
  9. Air fry for 10-12 minutes or until golden brown and crispy.
