Ingredients

- 4 large eggs
- 1/2 cup shredded cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 8 small flour tortillas
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a bowl, whisk the eggs with salt and pepper.
- Add diced bell peppers and onions to the eggs.
- Cook the egg mixture in a skillet over medium heat until scrambled.
- Place a spoonful of the egg mixture and cheese in the center of each tortilla.
- Roll the tortillas tightly and secure with a toothpick if necessary.
- Brush the taquitos with olive oil.
- Place the taquitos in the air fryer basket in a single layer.
- Air fry for 10-12 minutes or until golden brown and crispy.
