Ingredients

  • 1 cup grated carrots
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the air fryer to 320°F (160°C).
  2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together sugar, brown sugar, oil, eggs, and vanilla.
  4. Add grated carrots to the wet ingredients.
  5. Combine dry and wet ingredients, then fold in walnuts.
  6. Pour batter into a greased air fryer-safe cake pan.
  7. Air fry for 25-30 minutes or until a toothpick comes out clean.
  8. Let the cake cool before serving.
