Ingredients

- 1 cup all-purpose flour
- 1 cup grated carrots
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup chopped walnuts
Instructions
- Preheat the air fryer to 320°F (160°C).
- In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together sugar, brown sugar, oil, eggs, and vanilla.
- Add grated carrots to the wet ingredients.
- Combine dry and wet ingredients, then fold in walnuts.
- Pour batter into a greased air fryer-safe cake pan.
- Air fry for 25-30 minutes or until a toothpick comes out clean.
- Let the cake cool before serving.
