Ingredients

- 1 large eggplant, cut into fries
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Dip each eggplant fry into the beaten eggs, then coat with the breadcrumb mixture.
- Arrange the coated fries in the air fryer basket in a single layer.
- Cook for 15-20 minutes or until golden brown, shaking the basket halfway through.
- Serve hot with your favorite dipping sauce.
