Description
Mini low-carb pizzas made with air fryer eggplant.
Ingredients

- 1 medium eggplant, sliced
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 375°F (190°C).
- Slice the eggplant into 1/2 inch rounds.
- Sprinkle salt on the eggplant slices and let them sit for 10 minutes to draw out moisture.
- Rinse and pat dry the eggplant slices.
- Spread marinara sauce on each eggplant slice.
- Sprinkle mozzarella cheese over the sauce.
- Season with oregano, garlic powder, salt, and pepper.
- Place the eggplant slices in the air fryer basket in a single layer.
- Cook for 10-12 minutes until the cheese is bubbly and golden.
- Serve warm.
