Ingredients

- 1 bell pepper, sliced
- 1 onion, sliced
- 1 zucchini, sliced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, combine sliced vegetables.
- Add olive oil, chili powder, cumin, salt, and pepper.
- Toss to coat the vegetables evenly.
- Place the vegetables in the air fryer basket.
- Cook for 10-12 minutes, shaking the basket halfway through.
- Remove and serve immediately.
Notes
- Adjust seasoning to your preference.
- Feel free to add other vegetables such as mushrooms or corn.
- Serve with tortillas or over rice.
