Ingredients

  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup poppy seeds
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 2 tablespoons lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat the air fryer to 320°F (160°C).
  2. In a bowl, mix flour, sugar, baking powder, salt, and poppy seeds.
  3. In another bowl, whisk milk, oil, egg, lemon juice, and lemon zest.
  4. Combine the wet and dry ingredients until just mixed.
  5. Divide the batter into muffin cups.
  6. Place the muffin cups in the air fryer basket.
  7. Cook for 12-15 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
