Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup poppy seeds
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 2 tablespoons lemon juice
- Zest of 1 lemon
Instructions
- Preheat the air fryer to 320°F (160°C).
- In a bowl, mix flour, sugar, baking powder, salt, and poppy seeds.
- In another bowl, whisk milk, oil, egg, lemon juice, and lemon zest.
- Combine the wet and dry ingredients until just mixed.
- Divide the batter into muffin cups.
- Place the muffin cups in the air fryer basket.
- Cook for 12-15 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store muffins in an airtight container.
- Adjust lemon flavor to your taste.
- Great with a dusting of powdered sugar on top.
