Description
A delicious and moist pineapple upside down cake made in an air fryer.
Ingredients

- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1 can pineapple slices in juice
- Maraschino cherries
- Brown sugar for topping
Instructions
- Preheat the air fryer to 320°F (160°C).
- In a bowl, cream together the butter and sugar.
- Add eggs one at a time, mixing well.
- Stir in milk and vanilla.
- In another bowl, combine flour and baking powder; gradually add to the wet ingredients.
- Prepare the air fryer pan with brown sugar.
- Arrange pineapple slices and cherries on top of the brown sugar.
- Pour the batter over the pineapple and cherries.
- Air fry for 25 minutes or until a toothpick comes out clean.
- Let cool before inverting onto a plate.
Notes
- Check the cake for doneness before removing from the air fryer.
