Ingredients

- 2 cups mashed potatoes
- 1/2 cup grated cheese
- 1/4 cup chopped green onions
- 1/2 cup breadcrumbs
- 1 egg
- Salt to taste
- Pepper to taste
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, combine mashed potatoes, cheese, green onions, salt, and pepper.
- Form the mixture into small balls or patties.
- Beat the egg in a separate bowl.
- Dip each croquette in the egg, then coat with breadcrumbs.
- Place the croquettes in the air fryer basket in a single layer.
- Cook for 10-12 minutes until golden brown, flipping halfway through.
Notes
- You can add herbs for extra flavor.
- Store leftovers in an airtight container in the fridge.
