Description
Crispy air fryer potato skins topped with cheese and bacon.
Ingredients

- 4 medium russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, chopped
- 1/4 cup sour cream
- 2 green onions, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 400°F (200°C).
- Wash and dry the potatoes. Cut them in half lengthwise.
- Scoop out some flesh, leaving a small edge.
- Brush the potato skins with olive oil and season with salt and pepper.
- Place the skins in the air fryer basket, skin side down.
- Air fry for 10 minutes until crispy.
- Remove the skins and fill them with cheese and bacon.
- Return to the air fryer and cook for an additional 5 minutes.
- Garnish with sour cream and green onions before serving.
Notes
- Use leftover potatoes for quick preparation.
- Experiment with different toppings.
- Store leftovers in the refrigerator for 2 days.
