- 2 medium sweet potatoes, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small onion, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a large bowl, toss diced sweet potatoes, bell peppers, onion, olive oil, garlic powder, paprika, salt, and pepper.
- Add the mixture to the air fryer basket.
- Cook for 15-20 minutes, shaking the basket halfway through.
- Check for doneness; sweet potatoes should be tender and slightly crispy.
- Serve warm.
