Ingredients

  • 2 cups of mixed vegetables (carrots, zucchini, and sweet potatoes)
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of paprika

Instructions

  1. Wash and slice the vegetables thinly.
  2. In a bowl, toss the vegetables with olive oil, salt, pepper, and paprika.
  3. Preheat the air fryer to 375°F (190°C).
  4. Place the seasoned vegetables in the air fryer basket in a single layer.
  5. Cook for 15-20 minutes, shaking the basket halfway through.
  6. Remove when crispy and golden brown.
  7. Let cool before serving.
