Ingredients

- 1/4 cup salt
- 1/4 cup sugar
- 2 tablespoons soy sauce
- 1 tablespoon black peppercorns
- 2 garlic cloves, crushed
- 1 tablespoon fresh herbs (rosemary or thyme)
Instructions
- In a large pot, combine water, salt, sugar, and soy sauce.
- Bring the mixture to a boil, stirring until salt and sugar dissolve.
- Add black peppercorns, garlic, and herbs.
- Remove from heat and let it cool completely.
- Once cooled, submerge chicken in brine.
- Refrigerate for at least 4 hours or overnight.
- Rinse chicken under cold water and pat dry before cooking.
