- 300g spaghetti
- 200g chicken breast, diced
- 2 large eggs
- 100g grated Parmesan cheese
- 50g pancetta, diced
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook spaghetti according to package instructions.
- In a pan, cook pancetta until crispy.
- Add chicken and garlic, cooking until chicken is fully cooked.
- In a bowl, whisk eggs and mix in Parmesan cheese.
- Drain pasta and quickly mix with chicken and pancetta off the heat.
- Add egg mixture, stirring quickly to create a creamy sauce.
- Season with salt and pepper.
- Serve with chopped parsley on top.
