A quick and healthy chicken and broccoli stir-fry meal.
Ingredients

- 1 lb chicken breast, sliced
- 2 cups broccoli florets
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon cornstarch
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add chicken slices, cook until browned.
- Add broccoli, soy sauce, and chicken broth.
- Mix cornstarch with a little water, add to the pan.
- Stir and cook until the sauce thickens.
- Season with salt and pepper as needed.
- Serve hot.
Notes
- Can substitute chicken with tofu for a vegetarian option.
- Add other vegetables like bell peppers or snap peas.
- Adjust soy sauce to taste.
