Ingredients

- 1 whole chicken (about 3–4 lbs)
- 8 cups of chicken broth
- 4 cups of water
- 1 onion, chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 2 cups of all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup milk
- 1/4 cup butter, melted
- 1/4 cup parsley, chopped
Instructions
- In a large pot, combine chicken, broth, water, onion, carrots, and celery.
- Bring to a boil and simmer until chicken is cooked through, about 1 hour.
- Remove chicken, let cool, and shred meat.
- Return shredded chicken to the pot.
- In a bowl, mix flour, baking powder, and salt.
- Add milk and melted butter to dry ingredients, stir to form a dough.
- Drop spoonfuls of dough into the simmering broth.
- Cover and cook for 15 minutes until dumplings are fluffy.
- Stir in parsley before serving.
Notes
- Use leftover chicken for a quicker meal.
- Adjust seasoning to taste.
