Ingredients

  • 1 whole chicken (about 34 lbs)
  • 8 cups of chicken broth
  • 4 cups of water
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 2 cups of all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1/4 cup parsley, chopped

Instructions

  1. In a large pot, combine chicken, broth, water, onion, carrots, and celery.
  2. Bring to a boil and simmer until chicken is cooked through, about 1 hour.
  3. Remove chicken, let cool, and shred meat.
  4. Return shredded chicken to the pot.
  5. In a bowl, mix flour, baking powder, and salt.
  6. Add milk and melted butter to dry ingredients, stir to form a dough.
  7. Drop spoonfuls of dough into the simmering broth.
  8. Cover and cook for 15 minutes until dumplings are fluffy.
  9. Stir in parsley before serving.
