- 2 boneless chicken fillets
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 1 tablespoon fajita seasoning
- 1 cup cooked rice
- 1/2 cup black beans, rinsed
- 1/2 cup corn
- 1 avocado, sliced
- 1/4 cup salsa
- 1/4 cup shredded cheese
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced onion and bell pepper. Cook until soft.
- Season chicken with fajita seasoning.
- Add chicken to the skillet and cook until no longer pink.
- In a bowl, layer rice, black beans, corn, cooked chicken, and vegetables.
- Top with avocado, salsa, and cheese.
