Ingredients

  • 2 cups cooked quinoa
  • 1 lb grilled chicken, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup tzatziki sauce
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions and let cool.
  2. Grill chicken until cooked through and slice.
  3. In a bowl, combine quinoa, chicken, tomatoes, cucumber, red onion, olives, and feta.
  4. Drizzle with olive oil and lemon juice.
  5. Season with salt and pepper.
  6. Add tzatziki sauce on top before serving.
