A hearty and comforting soup that combines the flavors of chicken parmesan with a rich broth.
Ingredients

- 1 pound boneless chicken fillets, diced
- 1 cup diced tomatoes
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onions and garlic; sauté until soft.
- Add diced chicken; cook until no longer pink.
- Stir in diced tomatoes, chicken broth, and Italian seasoning.
- Bring to a simmer and cook for 15 minutes.
- Stir in heavy cream, mozzarella, and Parmesan cheese.
- Season with salt and pepper.
- Serve hot.
Notes
- For a thicker soup, blend part of it and return to the pot.
- Garnish with fresh basil if desired.
