Ingredients

  • 1 pound boneless chicken fillets, diced
  • 1 cup diced tomatoes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onions and garlic; sauté until soft.
  3. Add diced chicken; cook until no longer pink.
  4. Stir in diced tomatoes, chicken broth, and Italian seasoning.
  5. Bring to a simmer and cook for 15 minutes.
  6. Stir in heavy cream, mozzarella, and Parmesan cheese.
  7. Season with salt and pepper.
  8. Serve hot.

Notes

  • For a thicker soup, blend part of it and return to the pot.
  • Garnish with fresh basil if desired.
