- 1 head of iceberg lettuce

Instructions
- In a skillet, cook the ground chicken over medium heat until fully cooked.
- Add shredded carrots and green onions, stirring for 2-3 minutes.
- In a bowl, mix together peanut butter, soy sauce, honey, rice vinegar, and sesame oil.
- Pour the peanut sauce over the chicken mixture, stirring until well combined.
- Season with salt and pepper to taste.
- Wash and separate lettuce leaves for wrapping.
- Spoon the chicken mixture into each lettuce leaf and serve.
