Ingredients

  • 2 chicken fillets
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil

  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup broccoli florets

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and dice sweet potatoes.
  3. In a bowl, mix sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  4. Place sweet potatoes on a baking sheet.
  5. Season chicken fillets with salt and pepper.
  6. Place chicken on the baking sheet with sweet potatoes.
  7. Bake for 25-30 minutes until chicken is cooked and sweet potatoes are tender.
  8. Steam broccoli while chicken and sweet potatoes are baking.
  9. Let everything cool, then portion into meal prep containers.
