Ingredients

- 2 cups cooked shredded chicken
- 1 cup shredded cheese
- 1/2 cup salsa
- 8 small corn tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix shredded chicken, cheese, salsa, salt, and pepper.
- Warm the tortillas in a pan until soft.
- Spoon the chicken mixture onto each tortilla and roll tightly.
- Place the taquitos seam-side down on a baking sheet.
- Brush with olive oil.
- Bake for 15-20 minutes until golden brown.
- Serve with additional salsa if desired.
Notes
- Use rotisserie chicken for quicker preparation.
- Adjust spice level by adding jalapeños to the filling.
- Store leftovers in an airtight container.
