A delicious chicken thigh recipe featuring sun-dried tomatoes.
Ingredients

- 4 chicken thighs
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup chicken broth
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken thighs with salt, pepper, and oregano.
- Add chicken thighs to the skillet and brown on both sides.
- Remove chicken and set aside.
- Add garlic and sun-dried tomatoes to the skillet; sauté for 2 minutes.
- Pour in chicken broth and bring to a simmer.
- Return chicken thighs to the skillet and cover.
- Cook for 25 minutes, or until chicken is cooked through.
Notes
- Serve with rice or pasta.
- This dish can be made ahead and reheated.
- Feel free to add spinach for extra nutrition.
