Description

Ingredients

  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 2 chipotle peppers in adobo sauce
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a pot, boil chicken fillets until cooked through. Shred the chicken and set aside.
  2. In a large skillet, sauté onion and garlic until soft.
  3. Add diced tomatoes, chipotle peppers, cumin, oregano, and salt. Cook for 5 minutes.
  4. Add shredded chicken and chicken broth. Simmer for 20 minutes.
  5. Serve with tortillas and garnish with cilantro.
