Ingredients

- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Tortilla strips for garnish
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté onion and garlic until soft.
- Add chicken broth, diced tomatoes, black beans, corn, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add shredded chicken and cook for an additional 5 minutes.
- Serve hot, garnished with tortilla strips and cilantro.
Notes
- Adjust spices according to your taste.
- You can add avocado for extra creaminess.
- This soup can be made ahead and reheated.
