- 1 lemon, halved
- 2 cups mixed vegetables (carrots, potatoes, green beans)
Instructions
- Preheat the oven to 375°F (190°C).
- Pat the chicken dry with paper towels.
- Rub the chicken with olive oil, salt, pepper, rosemary, thyme, and minced garlic.
- Place lemon halves inside the chicken cavity.
- Arrange mixed vegetables around the chicken in a roasting pan.
- Roast for 1.5 hours or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving.
