Description

Ingredients

  • 2 cups jasmine rice
  • 1 lb chicken breast, diced
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine rice, coconut milk, and chicken broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until rice is cooked.
  4. In a skillet, heat olive oil over medium heat. Add garlic and ginger, sauté for 1 minute.
  5. Add diced chicken to the skillet, season with salt and pepper. Cook until chicken is fully cooked.
  6. Once rice is done, fluff with a fork and stir in soy sauce.
  7. Serve chicken over the rice, garnish with chopped green onions.
