- 2 cups jasmine rice
- 1 lb chicken breast, diced
- 1 can (13.5 oz) coconut milk
- 1 cup chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine rice, coconut milk, and chicken broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until rice is cooked.
- In a skillet, heat olive oil over medium heat. Add garlic and ginger, sauté for 1 minute.
- Add diced chicken to the skillet, season with salt and pepper. Cook until chicken is fully cooked.
- Once rice is done, fluff with a fork and stir in soy sauce.
- Serve chicken over the rice, garnish with chopped green onions.
