Ingredients

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- Fresh parsley for garnish
Instructions
- In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper.
- Form the mixture into small meatballs.
- In a large pot, heat olive oil over medium heat.
- Add meatballs and brown on all sides. Remove and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened.
- Pour in chicken broth and diced tomatoes. Bring to a simmer.
- Add meatballs back into the pot. Cook for 20 minutes.
- Stir in heavy cream and heat through.
- Serve hot, garnished with fresh parsley.
Notes
- Adjust seasoning to your taste.
- Can substitute ground turkey for a lighter option.
- Store leftovers in the refrigerator for up to 3 days.
