Ingredients

  • 1 lb boneless, skinless chicken fillets
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup corn (fresh or frozen)
  • 1/4 cup cilantro, chopped

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add chicken fillets, cook until no longer pink.
  4. Stir in chicken broth, beans, corn, cumin, chili powder, salt, and pepper.
  5. Simmer for 20 minutes.
  6. Shred chicken in the pot.
  7. Stir in heavy cream and cilantro.
  8. Heat through and serve.
