A hearty and creamy chicken chili with white beans and spices.
Ingredients

- 1 lb boneless, skinless chicken fillets
- 1 can (15 oz) white beans, drained and rinsed
- 1 cup chicken broth
- 1 cup heavy cream
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 cup corn (fresh or frozen)
- 1/4 cup cilantro, chopped
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add chicken fillets, cook until no longer pink.
- Stir in chicken broth, beans, corn, cumin, chili powder, salt, and pepper.
- Simmer for 20 minutes.
- Shred chicken in the pot.
- Stir in heavy cream and cilantro.
- Heat through and serve.
Notes
- Adjust spices to taste.
- Can substitute chicken with turkey.
- Top with cheese or avocado if desired.
