Ingredients

- 2 lbs chicken thighs
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon sesame oil
- 1/2 cup green onions, chopped
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Place chicken thighs in the crockpot.
- In a bowl, mix soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil.
- Pour the mixture over the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, remove chicken and shred it.
- Mix cornstarch and water to create a slurry.
- Add slurry to the crockpot and stir until thickened.
- Add shredded chicken back into the sauce.
- Garnish with green onions before serving.

- Serve with rice or noodles.
- Adjust honey for desired sweetness.
