Description
A simple recipe for stuffed peppers made in an air fryer.
Ingredients

- 4 bell peppers
- 1 cup cooked rice
- 1 can black beans, drained
- 1 cup corn
- 1 cup salsa
- 1 cup shredded cheese
- 1 tsp cumin
- 1 tsp chili powder
Instructions
- Preheat your air fryer to 360°F.
- Cut the tops off the bell peppers and remove seeds.
- In a bowl, mix rice, black beans, corn, salsa, cheese, cumin, and chili powder.
- Stuff the mixture into the peppers.
- Place stuffed peppers in the air fryer basket.
- Cook for 12-15 minutes until peppers are tender.
- Serve hot and enjoy.
Notes
- Use any color of bell peppers you prefer.
- Feel free to add ground meat for extra protein.
- Top with avocado or sour cream if desired.
