Description

Easy Chicken Enchiladas are a simple and delicious meal made with shredded chicken, cheese, and enchilada sauce wrapped in tortillas.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese
  • 1 can (10 oz) enchilada sauce
  • 8 corn tortillas
  • 1/2 cup chopped onions
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Sauté onions until soft.
  4. Add shredded chicken and half of the enchilada sauce. Mix well.
  5. Warm tortillas in the microwave for 30 seconds.
  6. Fill each tortilla with chicken mixture and sprinkle cheese on top.
  7. Roll up the tortillas and place them seam-side down in a baking dish.
  8. Pour remaining enchilada sauce over the top and sprinkle with more cheese.
  9. Bake for 20 minutes until cheese is melted and bubbly.

Notes

  • Use rotisserie chicken for a quicker option.
  • Feel free to add black beans or corn for extra flavor.
  • Top with sour cream or avocado before serving.
