Easy Chicken Enchiladas are a simple and delicious meal made with shredded chicken, cheese, and enchilada sauce wrapped in tortillas.

- 2 cups cooked chicken, shredded
- 1 cup shredded cheese
- 1 can (10 oz) enchilada sauce
- 8 corn tortillas
- 1/2 cup chopped onions
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat.
- Sauté onions until soft.
- Add shredded chicken and half of the enchilada sauce. Mix well.
- Warm tortillas in the microwave for 30 seconds.
- Fill each tortilla with chicken mixture and sprinkle cheese on top.
- Roll up the tortillas and place them seam-side down in a baking dish.
- Pour remaining enchilada sauce over the top and sprinkle with more cheese.
- Bake for 20 minutes until cheese is melted and bubbly.
Notes
- Use rotisserie chicken for a quicker option.
- Feel free to add black beans or corn for extra flavor.
- Top with sour cream or avocado before serving.
