- 2 large eggs

Instructions
- Heat oil in a large pan over medium heat.
- Add mixed vegetables and sauté for 3-4 minutes.
- Push vegetables to one side and crack eggs into the pan.
- Scramble the eggs until fully cooked.
- Add cooked rice to the pan.
- Pour soy sauce over the rice and mix everything well.
- Season with salt and pepper.
- Garnish with green onions before serving.
