Description
A lighter version of the classic eggplant parmesan, made in an air fryer.
Ingredients

- 2 medium eggplants, sliced
- 1 cup breadcrumbs
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 2 eggs, beaten
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F (190°C).
- Sprinkle sliced eggplants with salt and let them sit for 30 minutes to draw out moisture.
- Rinse and pat dry the eggplant slices.
- Dip each slice in beaten eggs, then coat with breadcrumbs mixed with Italian seasoning.
- Place the coated eggplant slices in the air fryer basket in a single layer.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown.
- In a baking dish, layer marinara sauce, eggplant slices, mozzarella, and parmesan.
- Repeat layers and finish with cheese on top.
- Air fry for an additional 5-7 minutes until cheese is melted and bubbly.
Notes
- Use gluten-free breadcrumbs for a gluten-free option.
- Adjust cooking time based on the thickness of the eggplant slices.
- Let it cool for a few minutes before serving.
