Description

A lighter version of the classic eggplant parmesan, made in an air fryer.


Ingredients

  • 2 medium eggplants, sliced
  • 1 cup breadcrumbs
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 eggs, beaten
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Sprinkle sliced eggplants with salt and let them sit for 30 minutes to draw out moisture.
  3. Rinse and pat dry the eggplant slices.
  4. Dip each slice in beaten eggs, then coat with breadcrumbs mixed with Italian seasoning.
  5. Place the coated eggplant slices in the air fryer basket in a single layer.
  6. Air fry for 10-12 minutes, flipping halfway through, until golden brown.
  7. In a baking dish, layer marinara sauce, eggplant slices, mozzarella, and parmesan.
  8. Repeat layers and finish with cheese on top.
  9. Air fry for an additional 5-7 minutes until cheese is melted and bubbly.
