Healthy Air Fryer Stuffed Bell Peppers are a nutritious and delicious meal option, packed with flavor and easy to prepare.


Ingredients

Scale
  • 4 bell peppers
  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  4. Stuff the mixture into each bell pepper.
  5. If using, top with shredded cheese.
  6. Place the stuffed peppers in the air fryer basket.
  7. Cook for 12-15 minutes until the peppers are tender.
  8. Remove and let cool slightly before serving.

Notes

  • You can use any color of bell peppers.
