- 1 cup couscous
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cucumber, diced
- 1 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Fresh parsley, for garnish
Instructions
- Preheat your grill to medium-high heat.
- In a bowl, mix olive oil, oregano, garlic powder, salt, and pepper.
- Coat the chicken fillets with the spice mixture.
- Grill the chicken for 6-7 minutes on each side or until fully cooked.
- While the chicken cooks, prepare couscous according to package instructions.
- In a separate bowl, combine Greek yogurt, lemon juice, minced garlic, and diced cucumber to make tzatziki.
- Once chicken is cooked, let it rest for a few minutes before slicing.
- Serve sliced chicken over couscous with tzatziki on the side. Garnish with fresh parsley.
