Description
Homemade chicken stock is a flavorful base for soups, sauces, and gravies.
Ingredients

- 1 whole chicken (about 3–4 pounds)
- 4 quarts water
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, quartered
- 4 cloves garlic, crushed
- 1 bay leaf
- 10 peppercorns
- Salt to taste
Instructions
- Place the chicken in a large stock pot.
- Add water, carrots, celery, onion, garlic, bay leaf, and peppercorns.
- Bring to a boil over high heat.
- Reduce heat and simmer for 4-6 hours.
- Skim off any foam that forms on the surface.
- Remove the chicken and strain the stock through a fine mesh sieve.
- Season with salt to taste.
Notes
- Store in the refrigerator for up to 5 days.
- Freeze for longer storage in airtight containers.
- Use for soups, risottos, and sauces.
