Description

Homemade chicken stock is a flavorful base for soups, sauces, and gravies.


Ingredients

  • 1 whole chicken (about 34 pounds)
  • 4 quarts water
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, quartered
  • 4 cloves garlic, crushed
  • 1 bay leaf
  • 10 peppercorns
  • Salt to taste

Instructions

  1. Place the chicken in a large stock pot.
  2. Add water, carrots, celery, onion, garlic, bay leaf, and peppercorns.
  3. Bring to a boil over high heat.
  4. Reduce heat and simmer for 4-6 hours.
  5. Skim off any foam that forms on the surface.
  6. Remove the chicken and strain the stock through a fine mesh sieve.
  7. Season with salt to taste.
