Description

A delicious Italian chicken dish cooked in an Instant Pot with tomatoes, bell peppers, and spices.


Ingredients

  • 4 chicken thighs
  • 1 onion, chopped
  • 2 bell peppers, sliced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in the Instant Pot on sauté mode.
  2. Add chicken thighs and brown on both sides.
  3. Remove chicken and set aside.
  4. Add onion, bell peppers, and garlic; sauté until soft.
  5. Add diced tomatoes, chicken broth, oregano, basil, salt, and pepper.
  6. Return chicken to the pot.
  7. Seal the lid and cook on high pressure for 15 minutes.
  8. Release pressure naturally for 10 minutes, then quick release any remaining pressure.
  9. Serve hot with pasta or bread.

  • Serve with grated Parmesan cheese.
