Description
A delicious Italian chicken dish cooked in an Instant Pot with tomatoes, bell peppers, and spices.
Ingredients

- 4 chicken thighs
- 1 onion, chopped
- 2 bell peppers, sliced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in the Instant Pot on sauté mode.
- Add chicken thighs and brown on both sides.
- Remove chicken and set aside.
- Add onion, bell peppers, and garlic; sauté until soft.
- Add diced tomatoes, chicken broth, oregano, basil, salt, and pepper.
- Return chicken to the pot.
- Seal the lid and cook on high pressure for 15 minutes.
- Release pressure naturally for 10 minutes, then quick release any remaining pressure.
- Serve hot with pasta or bread.
Notes
- Adjust spices to your preference.
- Serve with grated Parmesan cheese.
- Leftovers can be stored in the fridge for up to 3 days.
