A delicious and easy Instapot chicken cacciatore recipe.


Ingredients

Scale
  • 2 pounds chicken thighs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Set the Instapot to sauté mode and add olive oil.
  2. Add the chicken thighs and brown on both sides.
  3. Remove chicken and add onion, garlic, and bell pepper. Sauté until soft.
  4. Add diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  5. Return chicken to the pot and mix well.
  6. Close the lid and set to manual high pressure for 10 minutes.
  7. Once done, allow a natural release for 5 minutes, then quick release the remaining pressure.
  8. Serve hot, garnished with fresh parsley.

Notes

  • Serve with pasta or rice for a complete meal.
  • Can use chicken fillets instead of thighs.
