A delicious and easy Instapot chicken cacciatore recipe.
Ingredients

- 2 pounds chicken thighs
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, sliced
- 1 can (14.5 ounces) diced tomatoes
- 1 cup chicken broth
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Set the Instapot to sauté mode and add olive oil.
- Add the chicken thighs and brown on both sides.
- Remove chicken and add onion, garlic, and bell pepper. Sauté until soft.
- Add diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Return chicken to the pot and mix well.
- Close the lid and set to manual high pressure for 10 minutes.
- Once done, allow a natural release for 5 minutes, then quick release the remaining pressure.
- Serve hot, garnished with fresh parsley.
Notes
- Serve with pasta or rice for a complete meal.
- Can use chicken fillets instead of thighs.
- Adjust seasoning to your taste.
