A refreshing and light creamy chicken salad with a Chinese twist.
Ingredients

- 2 cups cooked chicken, shredded
- 1/2 cup cooked rice
- 1/4 cup mayonnaise
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1/4 cup green onions, chopped
- 1/2 cup shredded carrots
- 1/2 cup chopped bell peppers
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- In a large bowl, combine shredded chicken and cooked rice.
- Add mayonnaise, soy sauce, and sesame oil. Mix well.
- Fold in green onions, carrots, bell peppers, and cilantro.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Serve on a bed of lettuce for added crunch.
- This salad can be served in wraps or on its own.
