Ingredients

- 12 black-eyed peas
- 1 cup collard greens
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon red pepper flakes
Instructions
- Rinse the black-eyed peas and soak them overnight.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add collard greens and cook until wilted.
- Add black-eyed peas, cover with water, and bring to a boil.
- Reduce heat and simmer for 45 minutes.
- Season with salt, pepper, and red pepper flakes.
- Serve hot for good luck.

- Soaking peas overnight improves texture.
- Collard greens can be substituted with spinach.
