Description

A hearty and comforting chicken pot pie inspired by Pennsylvania Dutch cuisine.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 pie crust, for top

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat.
  3. Add onions and cook until soft.
  4. Stir in flour and cook for 1 minute.
  5. Gradually add chicken broth and milk, stirring constantly.
  6. Cook until the mixture thickens.
  7. Add chicken, carrots, peas, potatoes, salt, pepper, and thyme. Mix well.
  8. Pour the filling into a pie dish.
  9. Cover with pie crust, sealing edges.
  10. Cut slits in the crust to allow steam to escape.
  11. Bake for 30-35 minutes or until the crust is golden brown.

Notes

  • Let it cool for a few minutes before serving.
  • Use leftover rotisserie chicken for convenience.
  • Feel free to add your favorite vegetables.
