A quick and easy recipe for potato chicken made in an Instant Pot.
Ingredients

- 2 pounds chicken breast, diced
- 4 medium potatoes, peeled and cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon olive oil
Instructions
- Turn on the Instant Pot and select the sauté function.
- Add olive oil and onion, and cook until softened.
- Add garlic and cook for an additional minute.
- Add chicken, potatoes, salt, pepper, and paprika.
- Pour in chicken broth.
- Close the lid and set the valve to sealing.
- Select manual mode and cook on high pressure for 10 minutes.
- Once done, do a quick release of the pressure.
- Stir the mixture and serve hot.
Notes
- Adjust seasoning to your taste.
- You can add vegetables like carrots or peas.
- Leftovers can be stored in the refrigerator for up to 3 days.
