Description

A quick and easy recipe for potato chicken made in an Instant Pot.


Ingredients

  • 2 pounds chicken breast, diced
  • 4 medium potatoes, peeled and cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil

Instructions

  1. Turn on the Instant Pot and select the sauté function.
  2. Add olive oil and onion, and cook until softened.
  3. Add garlic and cook for an additional minute.
  4. Add chicken, potatoes, salt, pepper, and paprika.
  5. Pour in chicken broth.
  6. Close the lid and set the valve to sealing.
  7. Select manual mode and cook on high pressure for 10 minutes.
  8. Once done, do a quick release of the pressure.
  9. Stir the mixture and serve hot.

Notes

  • Adjust seasoning to your taste.
  • You can add vegetables like carrots or peas.
  • Leftovers can be stored in the refrigerator for up to 3 days.
