Description

Ingredients

  • 1 cup rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 pound smoked sausage, sliced
  • Salt and pepper to taste

Instructions

  1. Soak red beans overnight in water.
  2. In a pot, sauté onion, garlic, and bell pepper until soft.
  3. Add the smoked sausage and cook for a few minutes.
  4. Drain and rinse the beans, then add them to the pot.
  5. Pour in chicken broth and add Cajun seasoning.
  6. Simmer for 1 hour until beans are tender.
  7. Cook rice according to package instructions.
