Description
A classic southern dish featuring red beans and rice cooked together with spices and smoked sausage.
Ingredients

- 1 cup red beans
- 1 cup rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 pound smoked sausage, sliced
- Salt and pepper to taste
Instructions
- Soak red beans overnight in water.
- In a pot, sauté onion, garlic, and bell pepper until soft.
- Add the smoked sausage and cook for a few minutes.
- Drain and rinse the beans, then add them to the pot.
- Pour in chicken broth and add Cajun seasoning.
- Simmer for 1 hour until beans are tender.
- Cook rice according to package instructions.
- Serve red beans over rice.
Notes
- Adjust seasoning to taste.
- For a vegetarian option, omit sausage and use vegetable broth.
- Leftovers can be stored in the refrigerator for up to 3 days.
