Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 lemon (juiced)

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Place the chicken fillet-side down on a cutting board.
  3. Using kitchen shears, cut along both sides of the backbone and remove it.
  4. Flip the chicken over and press down on the fillet to flatten it.
  5. Rub olive oil, salt, pepper, garlic powder, and paprika all over the chicken.
  6. Squeeze lemon juice over the top.
  7. Place the chicken on a baking sheet and roast for 45-50 minutes.
  8. Check for doneness; the internal temperature should reach 165°F (74°C).
  9. Let it rest for 10 minutes before slicing.
